Here is a recipe for your Indian favourite Kaju burfi or Cashew Burfi mithai – Kaju Kesar Katli.
This is a very very easy to make recipe and you’ll never have to go aging and again to the sweet shop for buy your favourite Sweet Kaju Katli, Make it your home.
Preparation & Cooking Time: 1.5 hours

Ingredients for Kaju Katli
Cashew Nuts (Kaju) - 250 gms
Powdered Sugar - 200 gms
Rose Essence - 2-3 drops
Cardamom Powder – 1/8 tsp
Silver warq (foil) for decoration
a pinch of saffron (kesar)
a little milk

Method of How to make Kaju Katli 

Step 1: Soak the cashewnuts in 1 litre of water for 1 to 2 hours & Drain and grind them to a fine paste in a grinder.

Step 2: Mix together sugar and cashewnut paste and cook the mixture on medium heat until of dough-like consistency. Add the rose water if the mixture is too hard.

Step: 3 : Add the Cardamom Powder and mix them all well.

Step 4: Warm the saffron in a small vessel, add a little milk and rub until the saffron dissolves.

Step 5: Cool the dough mixture slightly and add the saffron mixture. Mix very well.

Step 6: Spread the mixture evenly on a smooth surface.

Step 7: Spread the silver sheet over and cut into diamond shaped katlis

Step 8: Allow to set at room temperature for 1-2 hours or in the refrigerator for 30 minutes.

Step 9: Store in the refrigerator and serve at room temperature for great taste.
